Juicing–the Healthiest Way to Start Your Day

IMG_3717 I started my morning off right today, with a quick ride on my motorcycle (which didn’t last long, because I quickly turned into a popsicle), and then an incredibly healthy green juice for breakfast when I walked in the door.

Usually, I’m more of a green smoothie fan, but today I wanted to try something different. I’m fortunate enough to have parents, that bought a nice expensive juicer, and then went on vacation so I could sneak it out the pantry, dust it off, and give it a whirl.

I’m glad I did, because this stuff is very powerful!! It had me zinging off the walls with energy! Very cool!

 

The juicer seems to be something that is brought up in all the natural health books that I read. What is so great about it, and also what makes it different from a green smoothie in a blender, is that it extracts all of the juice from the fiber of the fruit or vegetable, so that way the liquid goodness is absorbed immediately into your body, and it gives a break to all of your digestive organs because it doesn’t have to focus on processing the fiber-y pulp. Major Score!! Instant energy! Happy body!

In my juice today, I had lots of green yummy things. I followed a recipe from Kris Carr’s wonderful book Crazy Sexy Diet. Out of every health book I’ve read, this is my Go-To. I’d even go as far as saying its my Healthy Living Bible. It has so much goodness packed in one perfectly sized book, and Kris Carr is like, my idol. I first stumbled upon her when I watched her documentary, Crazy Sexy Cancer, and have fallen quickly and hard, for this spunky health guru. She’s amazing.

Here’s a little bit about her story. At the age of 31 she found out she had stage 4 cancer (there is no stage 5) all over her lungs and liver. She was young and energetic and was an upcoming actress in New York living life the way we all do, with an average American diet, drinking, partying, and being young. But something happened… She got cancer! And it changed her world entirely. Her cancer was so rare, that every doctor she went to see had suggested something entirely different from the last, coming up with a large variety of different solutions – basically guest work (chemo, radiation, multiple organ transplant, etc.), but Kris refused to be used as a lab rat. instead she took matters into her own hands and submerged herself in the self healing, holistic world. After almost 10 years (she just had her 40th b-day, but you’d swear she was still in her 20’s) she managed to throw all of the health care practitioners for a loop, for one, by still being here, and also by being the most healthy and radiate woman you could meet. She’s completely changed her own life. She got the tumors to quit growing. They will never go away, due to the type that they are, but the doctors now say that she can basically look at them as “beauty marks’ as they are no longer a threat to her life, and she’s by far one of the healthiest women you’ll meet. Go Kris!! I Absolutely love her!! If you get the chance pick up her book, Crazy Sexy Diet, she will knock your socks off and have you rolling on the floor laughing. She’s really great.

Anyway, sorry for the ramble, I just get so excited. Here is what went into my green juice this morning:IMG_3716

All Organic!!

-5 celery stalks
-1 cucumber
-1 large leaf kale
-1 broccoli stem
-1 pear
-1/2 apple (added at the end, because I thought it needed a tad more sweetness)

This stuff was really neat and very different, but I enjoyed the taste. Very subtle hint of sweet.

It was the perfect way to start this morning. It gave me the energy to start this day with a blog post, and to get my booty out the door early, ready to go. Seriously, I have so much energy, I feel like I could go run a marathon. Lol!!

Potato and Artichoke Casserole

Due to the holiday season coming upon us, and also due to the fact that I haven’t posted a recipe in quite a bit, I thought it would be the perfect moment to share with you the dish that everyone always asks for. its so tasty, and so easy, and I’ve yet to find a person who doesn’t love it. And its completely vegan, so major bonus!

This dish for potato artichoke casserole came from a little old, paper and plastic spine bound Louisiana cookbook that my neighbor had. Little bitty, not many copies published, type of book. So, you know it’s got to be good, huh? My neighbor was a huge fan and she knew that I was was vegetarian, so she was sweet enough to make this for me one night. I was an instant fan, and have since made it countless times for family get togethers, parties, and showers. its always a hit. I just double, triple, and even quadruple the recipe, and its always completely devoured by the end of the night. These pictures don’t do it justice…

IMG_3685All you need is 6 ingredients:

- 2 can sliced potatoes
-1 can artichoke hearts
-1 shot glass of Zesty Italian dressing
-1/2 cup Italian bread crumbs
-1/2 cup vegetable oil
-4 tsp. minced garlic

 

 

 

The directions are simple, you just mix all ingredients together and then pop  it into the oven for 45 minutes at 350 degrees…

BUT!!! let me share with you the slight tweaks that make this dish so much better when I make it than when everyone else has attempted. So simple. But so much better

First off, when you open the cans, don’t completely drain them. leave half of the liquid in each can. This helps keep the casserole nice and moist.

Also, cut the artichokes in nice itty bitty bite sized pieces. I find people like the tinier chunks rather than a huge mouth full of larger artichoke quarters.

Next I mix in the dressing, the bread crumbs, the oil and the garlic…

Do a nice little stir stir stir, and fold fold fold, until everything is nice and mixed, and coated.

IMG_3698Last, you coat the the top of the casserole with some extra bread crumbs. I like to make sure I put a lot, and especially in the corners, because the juice seems to pool there a bit.

 

Pop in the oven at 350 degrees for 45 minutes.

 

And finally, enjoy!! Yum this is so delicious. And like I said, entirely, VEGAN!! (I didn’t say it was healthy, though… but you know, its ok to splurge every now and again…) Winking smile

I Dream of Radiance–Rachel’s Vision Board

I’ve been busy tonight, cutting and pasting and smiling and jamming out to the music. I’ve been working on my vision board, putting my dreams and goals out there in a visual, so I can see and remind myself daily that I want something more, and I can work towards it. Thought I’d share.

So, here’s what I’ve been up to tonight. I cut out pieces from magazines of things that inspire me and mean something to me and put them together in a collage, so I have something to reflect my dreams, all in one place, that I can see often. I know its hard to see what’s going on because everything is not very clear, but I swear I tried a million times and this was the clearest shot. The glare was terrible, and I moved it all over the house, with the same problem no matter where I went.

This is a sweet little reflection of many of my dreams. As you can see, I dream of simplicity, and beauty and peacefulness, surrounded in nature. I dream of escape. Quietness, and tuning out. I dream of health, and radiance, and sunshine… and reflection and being close to nature. I dream of playing and adventure, movement, and discovery. I want to have a place of peace. A place for reflection and gratitude.

The only thing its missing, is the love part. I couldn’t find a picture beautiful enough to describe the type of intensity and passion in a perfect partner.

I left a space… I know I’ll find something…

I was working through a workbook on success and reaching goals, and one of the exercises had us dream our most outrageous dream, one that seems almost  impossible to achieve. After much reflection and lots of free flowing ideas on paper, my ultimate dream emerged. It had me giggle, because it was so simple, but also so far away, huge, but possible. It wasn’t the dream of huge mansions and tons of money with fancy cars and yachts. It was so much more than that.

I dream of a sanctuary. I want land, with untamed forest and wildness. I want to have the most beautiful gardens with fresh nurturing fruits and vegetables. flowers and bees and butterflies. Life. I want to have a place for people to come together and enjoy the gardens and share. I want to have different structures, to have courses in health, on how to nurture your body properly through food, and how to grow your own food. I want to have yoga and Thai chi classes and meditation groups.  I want to have an animal sanctuary. for all the animals that have been abused and forgotten. I want a place where people and animals can just be. and have resect for one another, all life is precious. I want to share, with others, that there is so much more to gain through simplicity…

I have pages and pages of how I vision it all in my head.

Anyway, I still need to post on the new recipe I have. And I’m soooo tired! I actually got on here to share the recipe, but then, this all came out instead. Whoops. Oh well, I’ll post real quick. It’s a dish that everyone loves, and we are so due for a recipe. So, off to post number 2, real quick before I pass out sitting at my kitchen table.

Artichoke and Sweet Tater’ Chips with Dip!

Lately I’ve been having a craving for some finger foods!! And dipping and dunking foods are always my favorite! There’s nothing like having fun while eating something delicious, right?!
Well, one of my Go-To fun foods is steamed artichokes and different dipping sauces! YUM! And since I’m a fan of variety, I figured sweet potato fries would be perfect for dipping too! So here are instructions showing you how to steam artichoke, bake some sweet potato “chips’” and also the recipes for 2 different fun and tasty dips to go with!! ENJOY, My Friends!!

Let’s start with steaming artichokes!

The easiest way to steam anything if you don’t have a steamer or rice cooker or anything fancy like that, is to grab a large pot, the lid, and a colander!

All you need to do is put a few inches of water in the bottom of the pot (say 3-4 inches), place the strainer on top the pot, and the lid on top the colander. And there ya go! Perfect steaming contraption! I just place the artichokes face down, set the stove on medium high, and let them steam with the lid on for 30 to 45 minutes. Just keep checking to see if the artichokes are cooked by trying to pull one of the leaves off the artichoke, and if it comes of with little effort,  its ready to eat! Easy Easy!

To make the sweet potato chips (or fries!) I slice the washed sweet potato in round, thin, chip like shapes, or in skinny, long fry like shapes. All you need is a sharp knife. I like to leave the skin on because I like the texture, and its easier than to mess with peeling the sweet potatoes. This time I used a mandolin slicer, but I usually just use my knife.

Next, all you do is spread some olive oil on the bottom of a cooking sheet, place the potato pieces on top, and drizzle a bit more olive oil, a pinch of salt and pepper, and mix everything thing up until the slices are nicely coated. I use my hands because its simple and I’m a big fan of messy cooking! Smile

Last step is to bake in the oven at 400 degrees for 30 to 45 minutes. I like mine nice and crispy, so I leave it in close to the whole 45 minutes.

Next is the DIPS!! YAY!!

I have 2 dips that I’m a fan of. Both are vegan. One is healthy!! And the other… not so much!! And its funny because everyone that tries them both really enjoy the healthy one the most!! SCORE!!! But, like I said, variety is fun, so I’ll give you both!

Not-As-Healthy-Tangy-Dip:

1/2 cup Vegan Mayo
1 tbsp. Dijon Mustard
2 tsp. Sriracha (or any hot sauce)
1 small juiced lime (or lemon)
1/2 tbsp. curry powder

THAT’S IT!! Just mix and serve!

Healthy-Garlicky-Cheesy-Like-Dip:

1 tsp. minced garlic
1/2 cup water
1/2 tsp Herbes De Provence (or Italian seasoning)
1/4 cup Nutritional Yeast
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. salt
squirt or 2 Sriracha (or any hot sauce), to taste

-Sautee garlic in a sauce pan with a tiny bit of water, until browned.
-Add in the remaining ingredients
-Bring mixture to a boil, stirring often
-Let simmer for a few minutes to allow the mixture to thicken (you’ll know when to stop cooking when the mixture has reached a consistency that sticks to the spoon)

That’s it!!! This is so easy to make and so yummy! Just serve the dips in cute little bowls and go to town! I make it to snack on during movies, football games, or as a dinner itself. It’s always fun!

My Thoughts On My Training So Far

I’m using the old-school program I have at work to do this post so please forgive the format. I cant crop or adjust any pictures, so… oh well! :P

I’m at the office this morning after my 7th day of working out. Its been a total of 2 and 1/2 weeks!

Here are my thoughts on the training so far:

I’ve spent many many many dollars on crazy fad diets, diet pills, gym memberships, and everything else they can think of to get you fit. So far, nothing has worked… until I hit the gym with a personal trainer. I know it’s only been 2.5 weeks in and only 7 training days, but, I swear I can already feel the difference. My body aches in all the right ways (even my tushie is aching!), I feel better, stronger, and as if I’ll get results sooner and finally reach my fitness goals. Even though I’m recording all these workouts, I know I’d never get the same results without proper instruction. Having someone watch you while you do each work out is great because you may think you’re doing the move perfectly, when you are actually off just a smidgen, and man, does that smidgen count. “Push your butt out a little further, spread you feet an inch wider, lower your butt an inch closer to the ground.” THOSE INCHES COUNT and make a world of difference, You Can FEEL it!! lol! I think I’ll have “Pull your abs in, back straight, belly button in!” drilled into my head forever by the end of the month. There is nothing like having someone pushing you to do better, just when you think you can’t do anymore. And nothing feels more amazing then when you actually do that extra rep that you thought you’d have to give up on. Even if i dont drop a pound this whole month, I’ll be sticking around for many months with Lauren. I feel so much better and full of energy!

Circuit Training: 50 seconds of the workout, 10 seconds to move to the next station, repeat circuit twice

DB Squat, High Knees, Triceps Press, V Plank Burpee, Shoulder Pushup, Jump Rope, Medicine Ball Squat, Cross Over Mt. Sprints

Abs Work:

Butterfly Kicks, Side Plank, Other Side Plank, Sit Ups with both arms and Legs straight up in the air, Bicycle Crunches, Hold Boat Pose while crossing elbows left to right.

Repeat twice

Cardio: walk at a speed of 3.0 for 60 seconds, run at a speed of 5.5 for 60 seconds, alternating for 15 minutes.

Play Dirty!

Did a 5k run this past Saturday with a handful of my favorite peeps. We ran our butts off, climbed over walls, jumped over mud pits, climbed through tunnels and under ropes, all while trudging through the sloshy, dirty dirty dirty mud! We ran through pitch black warehouses, climbed over huge hay stacks and climbed up and over 20 ft rope walls. And the whole time we were hauling ass for over 3 miles! BooYea!! We bad!!

Can’t wait for the Warrior Dash next October, which is 10x the amount of hard-core-age and filled with mega hard obstacles! I’m talking barbed wire, jumping over flames, swimming through mud, 30ft high walls to climb, and jumping through wrecked cars! Can’t wait for that one again! Here are a few pictures from that race! We were COVERED in mud!! Check out Shontel’s head in the last pic!

Friday!  We ran though this routine 3 or 4 times I cant remember! There were other moves added, but I cant remember! Sheesh! that’s why I have to keep these posts coming on time! hehehehe!

Monday!

We ran though this routine twice, including 20lbs bars in squats, 10-15lbs bars in the lounges, and 2 10lb dumb bells in the other moves. Youchies!

And for cardio she had us speed jump rope, on 20 seconds, off 20 seconds for 6 minutes straight!

Man, it feels Gooooooooooood!!! I ‘m starting to feel like one sexy kitten! Well… more so than usual… Winking smile heheheh!

Cirque Du Soleil’s Dralion

This past Thursday I had the pleasure of seeing this beautiful show with Daniel A., my cousin Sadie, and her boyfriend Jonathon. I have seen one other Cirque Du Soleil show before, Alegria, which had me mystified and in awe from opening to close. There is something about these shows that touch a part of you, and make you feel as though your dreams are possible. Its all just so beautiful.

Dralion is the fusion of ancient Chinese circus tradition and the avant-garde approach of Cirque du Soleil. The show’s name is drawn from its two main symbols: the dragon, representing the East, and the lion, representing the West. Dralion derives much of its inspiration from Eastern philosophy with its perpetual quest for harmony between humankind and nature. 

Dralion was brighter, louder, and very vibrant and warming, compared to Alegria’s wispy fantasy filled, dream-like feel. Both were incredible and worth seeing. If you have the opportunity to see one of these shows, please, do yourself the favor and buy a ticket. You won’t regret it.

I was unable to take pictures on my own as they don’t allow cameras in the show and my phone took horrible shots, but here is what i could find online.

This is the little nymph that hung around throughout the show just hanging out in random portions of the scenes. A different version on this character seems to be a common element in all of the Cirque Du Soleil shows.

 

They had the contortionist, which was incredible to see, as always.

 

 

 

 

Also, my favorite, is the Silks dancers. I love them so much and I can really appreciate the hard work that goes into these acts. I took a silks class once before and it is not an easy thing to do. it takes strength and control and tons and tons of training! I also love the Lyra act (I couldn’t find a photo of it) which is the big hoop suspended from the air that a woman does acrobatics on. Seeing these acts really lights the flame in my heart.

   

They had an amazing act of men and women defying gravity by walking up walls and doing impossible looking flips!

 

There were 4 main elements to the show, represented in characters above. Each part brought its own unique qualities to the acts.

They also had these 3 clowns that helped transition the show along. they were very comical and a joy to watch. they had me laughing the entire time they were on stage.

The show was wrapped up with these interesting little lion guys, dancing around the stage and preforming balancing acts. There were 2 men to each costume and it was neat to see them work together to create an illusion of a lion doing all these incredible tricks.

I really enjoyed the show and I will be catching the next show that decides to swing through town one day. It makes me feel like a child in a fantasy world watching them all preform!!

Colorado–Part…? 3 I Think!

I forgot that I was suppose to continue on with my Colorado trip until Paula kindly reminded me. Sometimes you get too wrapped up living life to remember to reflect back on past occurrences. Colorado was awesome though so let me keep it going. I need to keep it fresh anyway, to motivate me to get back there more quickly.

The following morning, day 2 of the trip, Daniel A. and I woke up at 7am and hit the streets for a nice jog. The weather was, and always seemed to be, absolutely perfect! We jogged down Mathews street until the road ended, and then we looped around to head back home. I would say it was about a quarter of a mile one way. Not that far but, it was a nice way to get the blood pumping.

We made it back and waited for Daniel R. and Paula to wake up so we could head down town to rent some free bikes from the bike library. I think we finally made it out the door around 11am and took the walk, 5 or 6 blocks, to downtown Fort Collins. Here are some lovely discoveries along the way!

The bark on many of the local trees were interesting to me. I’m not sure what type of trees these were but they felt so soft and spongy. I had to take a close up. Beautiful. We also kept passing in front of this one particular church that resembled a castle. I loved it.

We made it to the Bike Library, a place where they let you rent out a bike and a lock free of charge for 7 days, as long as you bring the bike back. We each picked out a bike and headed out for a nice little ride around the down town area. Something I wish I had taken a picture of was the “Dismount Zone” signs. It was for the high traffic areas, where you have to get off and walk your bikes. I enjoyed the little sign dude. Smile Also, I was really impressed that the grounds had little sensors in the bike lanes that picked up whether a bike was waiting at the light or not. So very cool. I’m a big fan of Fort Collins, it really sucked me in with this first bike ride.

The picture below and to the right is where poor Paula got stuck at a traffic light in the middle of a high traffic intersection, all alone. Sad smile It was so cute though, she came around the corner and up the street just like a pro.

Daniel and Paula led the way taking us to a little café called Indulge. I’m not sure of the origins, but it was very nicely decorated in a Mediterranean like décor. The interior was beautiful and very welcoming. The woman there was sweet and friendly. We chatted with her about how we were afraid of the winter weathers, being southerners, and the we had heard they were not very pleasant. She assured us there was nothing to worry about and that the winters there in Fort Collins is something  she looks forward to every year, as she really enjoys it so much. She told us that the snow never stays of the ground for very long and that the sun is always shining, so its never dreary or depressing. Sounds like I need to start planning a winter vacation! Winking smile We hung out for a bit, tried some teas, fruit drinks, and nice little treats.

After the trip around town we stopped back at the apartment for a moment or two, but I couldn’t stay in-doors for long in the beautiful CO weather. Arbour and I saddled up again and hit the streets to go discover on our own. The apartment is only 2 or 3 blocks away form the college campus, so after strolling the streets for a bit (unintentionally, I sent us in the opposite direction) we made it to campus and plopped down on their huge gorgeous grounds! I snuggled up with a book and Daniel with his iPad and we laid out on the grass.

The bugs started coming out after a bit so we headed home before the sunset.

That night the four of us relaxed and enjoyed each others company. I missed having us all hang out doing nothing together, just like back when we used to live together during college. It felt nice being there with my brother and Paula. Miss them already!

Paula treated each of us to our own little homemade mini apple pies. Perfect ending to our day.

Day 2 way wonderful there. I loved every second of being in Fort Collins. Remembering this day makes my long for a quick return.

Squat Press with two 8lb dumb bells, Walking Lunges, and Burpees
10 each and repeat for 10 minutes

Next, Jump Squats, Plank Pick Ups, and Full Sit Ups
10 each and repeat for 10 minutes

Last, Burpees 5 each, and TRX machine rows 15 each, repeat for 5 minutes

Females in Training–3rd Workout!

This past Monday was my third training day with F.I.T.! I’ll do a quick run through as I know the explanations get boring! Here are my notes and journal entries!

It says I had a protein shake right after my workout, crackers for snacks, bruschetta and hummus on cucumber slices for lunch and a snack later,and tofu, broccoli, brown rice stir fry for dinner. I’ll type it out here, really quick, just in case I need them later on. I know these must get boring! I did 20 sec of push ups, 20 sec of holding plank, 20 sec of rest, repeat 8 times. Next, same routine, (20/20/20) X8 but swapping out jump-ups (squat down and then jump up with both feet on to a raised platform) & burpees (look these up on YouTube, they SUCK!). Next it was (40/40/40/rest 40) x4. Over Head Stretch was lying on your back, hold 10lbs weight straight in front of you and then raise it above your head until right before you touch the ground, lift back up, and then drop forward to your waist, with control and back up again. Forehead touch is, while still lying on your back, hold 10lbs weight straight above your face and then bending elbows lower  the weight to your forehead and back up again. lower leg lift and drop is while still on your back, holding same weight straight up above your chest, lift and drop both legs together down to the floor and then up in the air again. I know, its had to imagine without visuals, but I’m just trying to get a description out so I can have an idea for later use.

This Training day was this past Monday (yesterday) morning from 7am to 8 am.
I headed to my parents and hopped into the shower before I made it to work at 8:45pm fully energized and ready to go! Morning work outs are MUCH muchmuchmuch better! I felt amazing and bright and aware the entire day, and was able to go to sleep at a great time with little effort!

Not much happened today, Tuesday, besides a hectic, crazy busy day at work. Boring stuff. No workout. So here is my food journal for today!
