My Best Friend’s Wedding–Remie Part 1

Hi guys! I’ve been keeping it low-key here on my blog lately becaaaaause I went to the eye doctor recently and he said that computers are messing up my eye sight! Ek! Yup, sucks, huh? Well, I work on them 6 days a week, 9-5:30, and then come home and blog some nights… so I’ve managed to go from perfect vision, to needing glasses in less than 2 years. Youch! So, truth be told, that’s why I haven’t been blogging much lately.

BUT, I love my very dear friend Remie, and I love this blog, and I’ve been promising to cover Remie’s wedding from back in JULY for months now, so here I am! I’ve attempted many many times before, but I managed to take over 1000 pictures during her wedding, and those are not including the professional photos Remie had gotten from her photographer. Have I mentioned I’m a little photo obsessed?! hehehe! So, with out further ado… IMG_0503

This is for you, Remie Girl, and for Jordan. Thank you for allowing me to be a part of your beautiful wedding! I love you guys!

Part 1 – Rehearsal!

I’m going to start off this tour (hehehehe!) with 2 horrible shots…! The happenings in the pictures are not horrible, but the picture quality is Terrible! I don’t know what was going on during the actual rehearsal, but I must have had my camera on the worst setting, because every single photo came out either blurred, or with terrible lighting! But even with all that, these 2 photos I love.

I loved that I captured this picture of Remie directing and pointing and getting things done. To me this picture represents so much of this wedding as a whole. She pulled this entire wedding together in only a few months (was it 2? Or 3?), basically by herself, and it was all fabulous and beautiful and completely due to her super women decision making abilities! Seriously! The girl knew what she wanted! And I loved that this picture shows her doing what so does so well, taking charge and getting it done!

The second photo is of the entire wedding party being instructed on how and where to go after we’ve walked off the aisle. I liked this one because it shows almost everyone who was in the wedding, and why we were at the rehearsal! To be instructed! lol! Don’t we look so intensely glued to the directors? hehe! (That’s me, waaaaaay in the back, completely dark and blurred. can you see me?)

After the rehearsal, Remie’s parents hosted the rehearsal dinner in their home. It was incredible how much food there was, ribs, gumbo, tamales, spinach artichoke dip, strawberry salad, bean salad, sushi, and a bunch of other dishes, and it was all homemade by Remie’s mother, Sach! The super woman gene must run through the family. Winking smile  This is Remie with her mother and grandmother.

It was a really great time with Remie and Jordan’s closest family and friends coming together to celebrate and have a good time. Here are some of the snap shots I took.

I don’t know if you’ve noticed but the picture above and to the right is a picture of one of the groomsmen, getting a gift, wrapped by the groom himself. Check out that wrap job! LOVE IT!

And below, the girls got matching necklace and earrings to wear to the wedding, in a little New York City ceramic box, as the newly weds were moving to NY 3 days after the wedding.

New Orleans Red Dress Run

Every year New Orleans holds a charity fund raiser called the Red Dress Run where thousands of men and women get together and dress up in red dresses (yes, the men TOO!) and walk/jog through the streets of the French Quarter from bar to bar drinking beer and having a great time. All of the proceeds are divided between several charities so everything is for a good cause. I think I heard someone mention that last year they raised 94k! Go them! You spend between $40-$60 to get in which includes 2 meal tickets to the food bar, endless beer, and a back pack for the first several hundred people to sign up. As if beer, food, and live music weren’t enough, you also get a map to the many participating bars that also give you access to endless beer included in the ticket charge. WONDERFUL, eh?! Yea, I thought so. This will be the second year in a row that I’ve gone and it seems to be catching on as an annual birthday tradition for me as it always falls on the Saturday after my birthday each year. How perfect!? My birthday seems to stretch out each year, turning into more of a birth-month celebration! Yea, I’m not complaining. Winking smile

I went with Daniel and before we made it to the even we stopped and grubbed down on the only thing we could find at the gas station close to some sort of meal… Nachos!! Lol! Blah, not the best way to start the morning, but it was better than nothing! When we arrived in the Square where every thing was going on we checked in, got pinned on out numbers, and went straight for the beer! We know how to party! Winking smile  We learned from last years experience to keep stacking the cups to keep track of how many beers in we had already had, as last year… um, yea, we had no clue!!

We ran into a few interesting characters while at the park. But honestly that’s not uncommon in New Orleans on a regular day. People love the culture and to show off and party! Gotta Love the City! Open-mouthed smile

We bumped into a few buddies along the way. We had so much fun! We went from rockin’ out to the band on stage, to doing line dances in the middle of the square with hundreds of other Red Dress Runners, to watching 2 really cute and incredible fit guys booty dance it up on stage like, um, strippers… lol!, to bar hopping with buddies down random French Quarter streets, and then ending back in the square to grub down, all while drinking many many glasses of endless Abita Beer! Whoop Whoop! Great time!

IMG_1383(I know, I know, it doesn’t look all that appetizing, but was amazing after 5 beers and having to make do with what cha got as a veggie girl! I scarfed it down!) I piled on coleslaw and beans on a hamburger bun and had a salad on the side! Hahahaha! It tasted like $50 when you’re drunk and hungry!

 

 

Somewhere along the way, very far into my drunken stupor, I got the idea in my head that I NEEDED to find a hula hoop ASAP and I wasn’t going to stop until I found one. LIKE IT WAS A MUST, and I wasn’t going to stop walking in drunken laps around the park until I HAD one! When we first arrived there were many many kiddy hoops all over the place but they got scooped up pretty quickly. Well, when I‘ve had a few drinks in me I’m always in the groove to hoop it up! That first hilarious photo is if my drunken, frustrated face as after much searching I still hadn’t found one… UNTIL BAM!! Out of nowhere, I catch a glimpse and ITS ON! Lol! I couldn’t stop myself. I couldn’t do all the cool tricks I’ve learned because this was a cheap little tiny hoop, but I was super happy and enjoying myself immensely!

I think we finally hit the road around 4pm. BUT we had been there since like, 10am I want to say. Yea, that’s plenty plenty hours or drinking, walking, dancing, and goofing off. Not to mention we had a plane to catch the very next day at 7:30am! Yea, I know, we tried to keep the drinking to a minimum, as being hung over on a plane to Colorado didn’t sound very fun to either of us. We were good though!

I had a really great time with some really great people! The only thing that could have made it better was having my Remie-Girl there with like she was last time! Next Year!! (Heard that Remie?! You better be there! Winking smile)

Showing You How Easy Dinner Can Be

I stopped at my local Fresh Market and picked up an organic cucumber, some bruschetta and hummus from the deli section, and a few stuffed grape leaves from the olive bar. Less than $10 and I have left overs for tomorrow’s lunch! Yum!

My pups are huge fans of cucumbers, by the way. That’s Molly under my chair and Buttons standing on her hind legs trying to reach me up on my chair. Adorable! I love my girls!

Homemade Dairy Free Soft Serve Ice-cream!

This is my favorite desert!! Easy Easy Easy!!! I love recipes that require four ingredients or less and this one is just that and so simple to make. It’s healthy for your body (nutrition power punch!), healthy for the planet (we’re leaving the animals frolicking in greener pastures for this dish!) and healthy for your heart (who doesn’t get excited over a guilt-free bowl of yummy ice-cream!?)! This is my banana soft serve ice-cream!

I made this when I got home from work today, as  it was 104 degrees outside and I was craving something to cool me down and satisfy my sweet tooth! This is my go-to recipe when I have ice-cream on the brain but still want to try and keep things healthy and nurturing! (I know this looks a little melted… and that’s because it is!! LOL! After I made this I had the bright idea that I should probably be sharing this in a new post for you guys, so I was running all over my house trying to figure out where I last placed my camera, and when I got back to it, the heat had already had its way with my ice-cream… Ek!! Oh well, it still hit the spot!)

All you need is:

-2 Frozen Bananas
-Soy Milk (or almond is good too!)
-Cinnamon
-Stevia
(And sometimes vanilla extract, but I was out!)

Basically you just place the frozen banana into your blender, pour in enough non-dairy milk to cover the blades, give the cinnamon a few shakes, and use a tiny bit of stevia (about 2 pinches) and BLEND!!

Let the blender do its magic for a few moments but be sure to keep an eye on it as it shouldn’t take longer than a minute!

I wish I would have snapped a photo of what this looks like when its finished blending in the blender as it looks really neat. All you’re looking for is that there are no clumps and that the mixture has formed an almost solid smooth looking swirl design in the bottom of your blender.

Just scoop the glob out into a bowl! Add any extra toppings if you’d like (Mmmm, Blueberries! And Walnuts! And Coconut! Oh My!). And enjoy!!! This always makes a ton so there will be more than enough to share. I usually only put a tiny dent in my serving as it seems my eyes are ALWAYS bigger than my stomach when I make this!

Bonus: The sweet cinnamon-y flavors remind me of Christmas!

*Oh! And just so you know, I’ve made this many many times with only frozen banana and enough water to cover the blades and its comes out delicious! Especially if you’re a banana fan! Maybe if you add in a few drops of honey it’ll add in a bit more sweetness, but yes, banana and water have worked for me many of times! You’d be surprised at the sweetness of a lone blended banana! Winking smile 

*Today I’m grateful for sweet surprise notes from loved ones, cute workout gear (I just got some and man is it good for motivation!), and coming home to 2 excited puppies and a nice book to snuggle up with! Have a beautiful day!!

Mexican Bean Salad!

I’ve recently come cross the most amazing dish and I would love to share this with everyone! Its so light and refreshing! And so very yummy! Addicting almost!

I was looking for a new recipe that was light and healthy and something that I could keep in the fridge that was easy enough for me to just grab and go. Plugged in “Top Vegan Recipes” in Google, and voila! Mexican Bean Salad! There were several “top” dishes, but out of them all this was the only one that caught my eye enough to give it a try.

And I’m so glad that I did! I loved everything about this dish! The flavors are perfect together and the lightness of the entire salad is so perfect and appealing. You feel GOOD after eating this!

Here goes:

In a large bowl mix together:

1 can each of black beans,
1 can kidney beans,
1 can cannellini beans, drained and rinsed!

Chop and add

1 green bell pepper,
1 red bell pepper,
1 purple onion,
1 10 oz. pack of frozen corn. Set aside!

Look how pretty! Its like a veg food rainbow!! Ooooooo! Aaahhhhhhh!!!

In a small bowl, whisk together:

1/2 cup olive oil,
1/2 cup red wine vinegar,
2 Tbsp. lime juice,
1 Tbsp. lemon juice,
2 Tbsp. sugar,
1 tsp. salt,
1/2 tsp. minced garlic,
1/4 cup chopped cilantro,
1/2 tsp. cumin,
1/2 Tbsp. black pepper.
Add hot sauce (I used the roster sauce, yum!) and chili powder to taste!

Look how gorgeous! Would you ever think food could look so pretty and uplifting?! I love it!

This recipe makes a HUGE bowl of this stuff! I wish I would have snapped a photo of my holding the bowl so you could see how large it actually is! I was feeding off this dish for a few days and It tasted wonderful every time!

*Today I am grateful for telephones, as I was able to catch up with a good friend that I miss that is living in Cali and also my brother Daniel in Colorado! Daniel has been gone for about a month now! Can you believe it?! I miss him and his girlfriend Paula already! Hmm, I’ve always wanted to visit Colorado! I think its about time I mark that one off the “Will Do” list! Winking smile 

Ethiopian Food

I’m going to play a little catch up about the happenings from this past week. I’ve been a smidge too busy doing stuff to actually post about what it is I’m doing.

So, Catch Up Blog #1! Ethiopian Food!

This past April, when I took my trip to Cali to visit my friend Harold and take a break from the working world (I’m about due for another one), I was pleasantly surprised to be introduced to Ethiopian food. We have nothing similar to it in my part of Louisiana and having never had any before so I was so down for that ride!

I’m so glad I did, because I was instantly a fan. I actually had to have it again before my Cali trip ended, as I knew it would be a long looooong time before I’d be able to experience the thick saucy lentil dishes and hearty spinach and potato concoctions. Lets just say on my return home, I must have been texting Harold to mail me, ship me, FedEx me, or hand deliver me some Ethiopian food on the reg, probably weekly if not daily at first!

So after 3 months of not being able to fulfill my craving for the tasty ethnic dishes, I finally gave in and did ANOTHER (as there were many, each with no luck) search for Ethiopian food anywhere near where I live. One place showed up on EthiopianRestaurants.com, The Red Star! I swear it hadn’t shown up on my previous searches! I jumped for joy and set the date, that night I was driving the 45mins to New Orleans to hit up some amazing grub.

Having waited the entire day with great anticipation, I was super bummed out when my date for the night told me he couldn’t find it on Google! I called the number and yup, disconnected! Sad smile 

Trying yet again, somehow I stumbled across another New Orleans Ethiopian restaurant!! How had I not seen this other place before!?! And right on my fav. New Orleans street!!Magazine!!Game On!!

When we pulled up, we were a tiny bit confused, but upon seeing where the place was located, (in the back of some other building in a little bitty place that looked nothing like a restaurant) we knew we were in for something fun! Its always the little Hole-In-The-Wall places that have the best food! Eeeeee! I couldn’t wait!

We walked in and snagged the last open table and we were ready to grub down! Having thought and talked about the food for the entire 30 minutes across the causeway and then another 15-20 to the place, we were so ready to order the entire menu!

Our waitress was  really nice, we mentioned we drove in from Mandeville to come try their food and she was impressed. We immediately ordered some appetizer that I had tried in Cali. Not sure what its called but I just described to her that it was some little triangle ouches with lentils and she knew exactly what I was talking about. These were so delicious! Even better than what I remembered, as these seems to be made with the same or similar dough as a beignet! The flavors and textures were right perfect and flaky! We were happy!

We both ordered the Veg Platter as everything sounded so good! And after having taken such a long trip we wanted leftovers! Winking smile 

(I’m not sure if you can read these but I just wanted to share what the menus had on them and what kinds of foods their dishes consisted of! I wish I could have tried everything!)

While we waited for our food I explained how the food was eaten at the other Ethiopian places… With no utensils!! Just your hands! And this special spongy bread stuff. You scoop and dip and grab globs!!! So much fun!!

This stuff was amazing!!! I’m so glad I found this place! Everything tasted wonderful and I really enjoyed it! I cant wait to go back again! AND after trying this I got excited enough to go online and look up a recipe for the red lentil dish! Daniel went and found a store online where we could buy the spices and the flour for the bread! I CANNOT WAIT TO TRY MAKING THIS DISH! Post to come!

Easy Avocado, Tomato, Onion Salad

This is a salad that I just threw together that came out absolutely delicious and surprisingly satisfying. It consists of 1 onion, 1 avocado, and 1 tomato. This makes enough for 2 people to have a nice lite meal.

Basically you just chop everything in tiny bite sized pieces.

I used my go-to dressing that is tasty and actually quite good for you. Its 2 Tbsp. Olive Oil, 2 Tbsp. Braggs Apple Cider Vinegar, and 8 squirts Braggs Amino Acids. I just eye-ball the measurements and add each to taste. This dressing is quite strong so a little goes a long way.

I hope you give this one a try, as its very simple to make and is packed with a ton of wonderful vitamins and minerals! It’ll give your body an extra boost of happy! Red heart

So, since this post is pretty short, I thought I’d add in a bit of brain splewdge on where I am at right now in my little world, in reference to mental clarity and life in general…

Um, on second thought… Lets not over think it…!

Hope everyone had a wonderful weekend!! I’ll fill you in on how mine went in an upcoming post. I’ll give you a teaser though, it has to do with growing my own wheat grass and also an at home intense yoga meditation retreat!!! WooHoo!! It was a perfect weekend! My brain feels so refreshed!

How To Make Easy & Healthy Strawberry Bars

This recipe is so easy and really fun to make! If you have kids, give this one a whirl! I think they’d love it!

You only need 4 basic ingredients:

Start with 1 and 1/2 cups pitted dates. I used the SunSweet brand, as its all they had at my local Winn-Dixie, and it worked perfectly! (Just make sure you remove the stems, because there were quite a few left in the bag.) Add them all into the food processor.

Next, add 1/4 cup of raw, unsalted cashews. I’m sure you can substitute other types of nuts, but cashews are always my go-to, as I usually have them on hand in my pantry.

Next, you’re going to add 2 Tbsp. whole rolled oats (got mine at Whole Foods, bulk bin) and a pinch of sea salt. Pulse and process this mixture until everything is well chopped and mixed. This will be your crust, so make sure its nice and sticky and most large pieces have been chopped up.

Pour the mixture into a small casserole dish and spread along the entire bottom of the dish.IMG_0780 IMG_0784 

Put aside for now!

Next your going to thinly slice enough strawberries to fill about 1 cup.

Take half of those strawberries and mashmashmash!

I squished and mashed and squash until I had a pretty liquid but still slightly chunky consistency. And, WOW, do mashed strawberries smell so good! In love

Next, spread the juice mixture on top of your crust. Take the remaining, un-mashed strawberries and lay them out over the top of the dish.

These are so tasty and bright and colorful you’re really going to love this dish!

I set the bars aside in the fridge while I quickly whipped up some chocolate pudding. These 2 dishes together are quite a perfect pair!

I actually had these for dinner that night and I felt light and fresh and energetic!

Five Guys! Cheap and Tasty!

Finally went to Five Guys! I’ve heard so much hype and praise over this place so I decided I’d see what everyone has been hooping and and hollering about. And I was not disappointed! This place was everything everyone told me it would be, and then some! You walk in and what do you see on the menu?! “ALL TOPPINGS ARE FREE!” Whhhaaaaaatt?!

And what else?! The veggie burger is only $2.29!! NO WAY!!!

So I ordered the veggie burger with ALL THE TOPPINGS (FREE!), minus the mayo and add A1!

Man O’ Man was I excited! And these burgers aren’t fast food quality either, its the real deal! Sesame seed buns, freshly made ingredients, and foods prepped that morning before opening! I’m totally not a burger joint kind of gal, but boy, this had me impressed! (But to be honest, I think I was a little swayed by the price of my meal… Less than $3!!! Wowie-zow!)

Another big thing with Five guys is the peanuts! You walk in and there are huge sacks of pounds and pounds of peanuts, free for you to grab and snack on while you wait! What an interesting way to stand out from the many many other burgers joints! Works for me (and the other 40+ people in this building, this place was PACKED!)!!

They called our number in less than 5 minutes (which went by in a snap because I was so busy chowing down on the peanuts) and I grabbed the food and dug in! Look at that receipt! $10 to feed 2 adults a decent meal AND have food left over that we just couldn’t finish! Wow, nice!

My burger had tons of mushrooms and onions, lettuce and tomatoes, and sauces galore! This puppy was stuffed and flavorful! Hit the spot! Not only that but the regular order of the fries as humongous!! Its like they gave you a half gallon bag FULL of fries!! I was excited at the time because we got all this food for barely any cost to our pocket books! (But, man, this place is everything that is wrong with the health problems of Americans today… tons of greasy food in heaping amounts for a fraction of the cost! but lets not get into that in this post… lol!)

But YES!! I WILL be going to Five Guys again! On that rare occasion that I DO crave a nice sloppy burger (veggie, of course!) Five Guys will be the place I’ll run off too!

Way to go, Five Guys! Its not easy penetrating the burger joint market successfully! Nailed it!

Easy Veggie Sandwich

I thought I’d post one of my go-to sandwich recipes for those of you who would like something easy, tasty, and relatively healthy to add to your recipe book. This recipe was inspired by the mushroom sandwich from the little health store, Another Beautiful Day, located behind my office. I eat there about once a week or 2-3 times a month. One day I watched them preparing mine and I picked up how easily the sandwiches were made. I went home that night and made my own version of their mushroom and super sandwiches (same sandwich, just with or without the mushrooms)!

So, here it is! What you are going to need is: Mushrooms, shredded carrots, guacamole (I use the pre-packed kind or just mash up some avocados), sprouts (I opted out on this particular day because I didn’t have them in the house, but it was still just as yummy), soy sauce, bread, and Slap Yo’ Moma (or Tony’s!). Cheese optional!

Start by slicing up your mushrooms. I like them nice and small, but don’t cut them too tiny because they will shrink when cooked.

Next, bring some water to a boil, just enough to cover the bottom of your pan. Add in some soy sauce, I start with 2-3 tablespoons and add to taste. Dump in your mushrooms… I used the entire crate, by the way, and this was more than enough to stuff 2 whole sandwiches.

Let simmer on medium heat for several minutes until the mushrooms look well cooked and have shrunken in size quite a bit.

I don’t know how, but I seemed to have skipped photographing the next few steps. What you do is toast some bread, spread guacamole on both sides, and load up with carrots and the mushrooms. You can add cheese if you’d like, just place it on top of the freshly cooked mushrooms and the cheese will melt over the entire thing. So yummy. I like to sprinkle Tony’s or Slap Yo’ Mama over the mushrooms once they are on the sandwich, just for a little extra flavor.

And voilà! Absolutely delicious, easy to make, and filling sandwich!! I know its hard to see in the picture but this puppy is stuffed and nice and oozy. I LOVE somewhat sloppy sandwiches! The juice from the mushrooms make this one a winner! I’ve made this one many many times, for veggie and meat eaters, and both are big fans! Test this one out! You wont be disappointed!
