Colorado: Part 2!!

Adventures in Colorado: Take 2!! Hehe! I was just now looking through all my pictures from the trip when I realized I still had more to cover from day one!! Apparently that crashing on the couch photo was just a quick nap. Winking smile I had completely forgotten that the same day we arrived in CO was the same day that the Bohemian Festival was happening and being that it was Sunday, it was the last chance to check it out. It was only a couple blocks away from the apartment and completely free to the public, so the 4 of us took a stroll to check out the goods. Here are some lovely shots of the happenings from later that first day.

I was amazed by how perfect the weather was in the middle of the day! The sun was out and shinning brightly. Gardens and veggies growing in every other lawn! IMG_1581There were bicycles everywhere! The trees were pretty amazing too! So different from home!

I couldn’t get over the bicycles! Everyone rode one! It was so biker friendly there in Fort Collins! There were bike lanes and bike sensors to activate the traffic lights! It was really neat! IMG_1583

IMG_1593The houses there were older and beautiful! Everyone was different and full of character. I could imagine myself in each of them. The greenery, the life, and the colors pulled me in immediately. From the moment I arrived in Fort Collins and started walking the streets I began to dream of one day moving there.

IMG_1590IMG_1592I kept passing each house and seeing a veggie garden front and center or tucked away in the back yard…! It reminded me of how difficult it was for me to keep everything in my veggie garden at home alive and thriving, with the constant heat and having to water all the time. The heat made  it difficult to tend the garden at home. BUT HERE!! Everything was flourishing!! I could picture myself here spending so many joy-filled moments in an organic veggie garden of my own. How wonderful!?

We finally made it though all the cuteness several blocks and to the festival. There was much going on there! Blocks and blocks of tents and people. Selling everything you could think of: spices, hoops, tai chi classes, dresses, dunking roller derby girls for charity! Even Encouraging words! Well, those were free!

We walked around down town and scoped out what everyone had to offer! It was a lot of fun! Check out the Zombie band we saw and the bicycle-built-for-many down below! Even the electrical boxes are pretty in Fort Collins!

We walked around a bit, Paula purchased 2 prints of some paintings from this really great artist. I wish I would have gotten shots of the prints at the time but it slipped my mind. I purchased some seasoning that accompanies bread and olive oil. After sampling some I couldn’t pass it up. 

On the walk home we stopped in at the grocery store and picked up a few things to make dinner that night: Vegan Spaghetti and “meat” sauce! Yum!

We called it a night with a game of Apples to Apples! I totally whooped ass! And check this out! The final score was Daniel, Daniel, and Paula, tied for 2nd place with 17 cards each! And me placing first with 27 cards! What are the chances of THAT! Pretty neat, huh?!

Vitamins! A Practice Worth Starting!

On any giving day, if you were to look next to my bed into my bookshelf/night stand you’d find at least 3 or 4 books on health, nutrition, meditation, vegetarianism, yoga, or how the body functions, all of which I’m currently in the midst of reading. I read any and everything I can get my hands on (you could just about label me as obsessed) as health and the human body fascinate me.

While I was at work this past Friday morning it crossed my mind that maybe it would be beneficial to share with everyone what I’ve learned about vitamin supplementation. I wanted to share with you how easy it can be and why its important to add this habit to your daily life.

<—Here’s an example of my addiction! My OTHER book shelf is ridiculously large and I’m super proud to say I’ve finished 80% of the books on there! Can you SEE the craziness that I am?! BOOKS! I’m a fiend! You could probably call me a super nerd! I just love learning!!

Back on topic! VITAMINS! Yes! Mucho Mucho Importante! So many of us are vitamin and mineral deficient, due to the lack of eating fresh living vibrant produce. (Fruits and veggies, People! They don’t grow out of the earth in abundance for nothing!) Winking smile 

In today’s world its much easier to pick up a burrito at the nearest Taco Bell than to actually whip up something fresh and nurturing like a salad or a green smoothie for lunch. Because of this we are lacking in essential vitamins and minerals, so its important to make sure we are supplementing our diets with body worthy vitamin tablets. Not all vitamins are created equally, so make sure you purchase the best quality vitamins that your budget will allow, as this will prevent a lot of the vitamins and minerals from being wasted (you release them out in your urine whatever your body doesn’t recognize, and many of the cheaper brands are less absorbable). But something is better than nothing, so rather than fretting about getting the best of the best, just worry about starting a vitamin habit to begin with and you can progress from there.

My vitamins are rotated out on a regular basis depending on what I’ve most recently learned, but there are a few staples that I never go without. These are the supplements that I’ve read about again and again in almost all of the health books as being the most beneficial. We all want more bang for our buck and with these few vitamin choices that is just what you’ll get! Winking smile 

1. Spirulina
2. Chlorella
3. Flax Oil (EFAs)
and B12 (for us veggie friendly folk!)

Spirulina: this is a microalgae that comes from the sea. Spirulina helps boost energy and mental clarity, is high in vitamins and minerals, rebuilds our cells, and helps get rid of toxins in our bodies. It’s a complete protein source. It contains 60-70% complete protein (meat consists of only about 25% complete protein). And it helps curb your appetite, so it is very diet friendly.

Chlorella: this is a freshwater algae. its rich in many nutrients including: protein, B12, EFAs, chlorophyll, iron, and zinc. It can help reduce cholesterol and boost your immune system. It removes toxins and heavy metals from your body. Most importantly, it has ALL essential vitamins and minerals needed for your well being. POWER PUNCH! Bonus: It’ll also help regulate your bowel functions. Make chlorella and spirulina your new best friend! Amazing what nature provides,eh?!

Flax Oil: Essential Fatty Acids (EFAs) are also important for your body and over all wellbeing. Healthy fats help regulate your metabolism and are essential for weight loss (yes! I said weight LOSS!). It helps your hair and nails grow healthy and strong. If you have dry skin or a dry itchy scalp its possible that you are not getting enough of EFAs in your diet. You can also find these in good healthy fats like nuts, seeds, and avocados. My source of choice is flax oil, as its easiest for me. I just put 2 tbsp. in my morning shake!

 

 

IMG_2431B12: Remember the saying “God made dirt so dirt don’t hurt?!” Well, it seems our childhood selves were on to something! B12 is produced by microorganisms in the soil. When B12 is ingested, the overage is stored in the body for future use over time. Animals eat grass directly from the soil. Omnivores eat the animal’s flesh and therefore get second hand B12 that was stored in the animal’s tissues. The reason its important for vegetarians to supplement is because human beings no longer eat vegetables straight from the ground. Nowadays it is very uncommon to eat anything with soil traces as we obsess over washing everything (which is actually a good thing due to our soils being contaminated with pesticides and chemical residues! Always wash your produce! Even organic!). I for one, am not a fan of eating mud pies or chowing down on dirt and I‘m pretty sure it is uncommon for many of us, so we need to supplement. The damage of being B12 deficient is irreversible and effects your neurological system. It can cause damage to your memory, vision and hearing! Not only that, but lack of B12 in your diet will hinder your ability to absorb iron properly. Yowza! This vitamin is important for vegetarians, but omnivores as well, as it tends to be under consumed in most

I have also been adding in Aloe Vera juice to my diet as it’s a great healing tool for any inflammation or distress internally. Its known for its anti-fungal, anti-bacterial, and anti-viral properties. And its also an immune system booster containing many many vitamins and minerals. If you have irritable bowl syndrome, colitis, or ulcers, Aloe Vera should be your new best friend. It has a very distinct taste, one of which I wasn’t a fan, but now I cant get enough of. Its easily incorporated into your diet.

Its easy to knock out all these supplements in one fell swoop. I take my supplements by mouth every morning and wash it all down with my morning shake. I just add the Aloe Vera and flax oil to the shake and BAM! I got my vitamin fill for the day!

 IMG_3430The shake is really easy to do, I just blend together 1 frozen banana, 2 tbsp. Flax Oil, several shakes of cinnamon, a pinch of stevia, and Aloe Vera juice to taste (I’ve come to love the taste so I use about half a cup). It tastes just like the vegan soft serve ice cream recipe I posted not that long ago. Perfect way to start my morning! Its light and refreshing and keeps me energized and focused!

Other note worth supplements are probiotics and vitamin D (most of us work in-doors for the majority of the day, so we tend to not get adequate vitamin D, which we absorb through our skin from the sun). More on these later!

*The point is we are ALL vitamin and mineral deficient. And with very little effort its easy to sneak in a few easy tweaks to your daily routine that will be immensely beneficial to your health! Colorado: Part One

Morning!! It’s a beautiful Sunday here in Louisiana! It’s 90 degrees outside, but the wind is blowing and the humidity is down so its been a great day so far. I woke up around 7am and took the motorcycle for a cruise this morning. It’s been about 4 weeks since I’ve actually ridden it (the heats been unbearable!). I’ve cranked it up a few times to let it run, but I haven’t had much time to do more than that with all the running around I’ve been doing lately. So, after 4 weeks it felt amazing to hop on and enjoy the nice weather.

Right now it’s a little past 12 and at this very moment I’m at my house relaxing and enjoying the beauty of being home with nothing to do on a Sunday! Its GLORIOUS! haha! It’s been so long since I’ve been home and able to just relax and be. I feel like I’m constantly doing! GoGoGo! But not today! It’s a Rachel just BE Day!

With some of my free time I thought it would be nice to catch up on filling you in on my recent Colorado trip. It’s been exactly a week since I’ve returned home so I need to get the experience out of my head before I forget too many details… But, really, how could I forget this?!

IMPOSSIBLE!

This year for my 26th birthday I was surprised with plane tickets to take a trip to Fort Collins, CO to go visit my brother, Daniel, and his girlfriend, Paula, and check out their new home. Paula is attending grad school at the college in town so both her and Daniel moved there about 2 months back. I had always wanted to visit Colorado, so I was super stoked about my birthday trip! Daniel A. was sweet enough to set up everything with my work to allow me to take the trip on such short notice, as he only gave me a 2 week heads up! What a nice birthday gift, eh?! We had tickets to head out of New Orleans for a 7:30am flight. The day before we had the Red Dress Run shenanigans in New Orleans and rather than taking the trip back home, Daniel’s brother, Ryan, was nice enough to let us stay at his place and drop us off at the airport the following morning.

Flight took off at 7:40am and it was a 2 hour and 45 minute flight. We had fun! It was the first time Daniel and I had ever taken a plane together (or any vacation at all, really!) so it was nice to just have the two of us there. Usually on a plane I don’t have someone sitting next to me that doesn’t mind that I’m sitting Indian-style in my seat and bumping knees and elbows every few moments, so I enjoyed the experiience. Winking smile

We arrived in Denver in no time at all (or so it seemed). Paula and Daniel were there waiting for us and the moment we stepped of the plane we could feel the “amazing” that is CO weather! Fresh, crisp, clean, cool air! Aaaaaaaamazing!

When we finally arrived in Fort Collins the 4 of us were starving!!! Daniel and Paula were so awesome, they brought us to this (VERY!) vegan friendly restaurant a few blocks from their home, called Rainbow. Everything on the menu was either healthy, organic, vegetarian, or easily made vegetarian, with many vegan options as well! I was so impressed! 1st experience in Fort Collins and I was already falling in love.

The building was actually an older home redone as a cozy little café type restaurant. There were many open windows allowing in the fresh air and sunshine. Hey! Did you kinwo that most homes in Colorado don’t have central air conditioning?! Yep! No need!! you can just keep the windows open for fresh air flow and the weather out side never gets hot enough were its uncomfortable! I’ll bet you the people here benefit mentally and physically because of this! Nothing like breathing in fresh air! Aaaaaahhh! Love it!

I wound up ordering a tofu and veggie scramble with the potato wedge hash browns. I’m not sure what they did but that tofu was really good! I have attempted a few times before to do a tofu scramble but I could never get mine to come out anywhere near as good as theirs did. The seasoning on the tofu was super flavorful. I really enjoyed it.

We had a lot of fun here and we had the best hosts!! hehe! I love my family (Paula included!)!

After getting some food in our tummies we drove a few blocks down to the apartment. Daniel and Paula’s place is in the perfect location!! Literally 2 blocks from the college, shops, grocery stores, and down town!! Open-mouthed smile

IMG_1577The first day was a lot of fun, but we wound up crashing pretty early (from what I remember). I don’t think we did much more on this first day, besides walking the streets a bit and seeing many many adorable little houses every where! I’ll show you how lovely and cute everything is there in my next post. I took tons of photos!!

So, yes! We crashed early so we could have a fresh start the next day!

Broccoli Crunch!

Remember how I told you I stumbled across a dish in the grocery store that looked so amazing but wasn’t vegan friendly in the slightest (Bacon Bits Galore, bleh!)? WELL, here is my version of the dish that I created that turned out better than I could have hoped for! Its so simple and very delicious!

Here is the Broccoli Crunch recipe, as promised!

1/2 bunch of broccoli, chopped in bite-sized bits (I prefer teeny tiny bits!)
1 handful of nuts of your choice (sunflower or walnuts <—My Fav!)
1 handful of raisins
2 globs of vegan mayo
(to taste! and by glob, I mean hefty spoon full, lol)
Many squirts of Raspberry Vinaigrette Dressing, (I‘d say 4 Tbsps. but taste as you go!)
1/2 white onion, chopped in tiny pieces
A pinch of Sea Salt

Ok! I know this ingredient list and the proportion instructions is quite vague, BUT its really one of those dishes where you add the ingredients in to the amount to which you prefer! Like I’m a HUGE fan of having raisins in this dish so I kept finding myself adding more and more! Also, the walnuts I used added a satisfying crunch that I couldn’t get enough of so I kept breaking up more walnuts and tossing the pieces in! This whole dish is based off of your taste and texture preference, but honestly, the more the merrier in this situation! It all tastes so good together! IMG_2344

  I thought you might like a picture of what I used for my dressing so here is a picture. I added a bit of salt to balance out the sweet and it worked out perfectly! 

With the ingredient list all you need to do is chop chop chop the broccoli and onions, crunch crunch crunch up the walnuts, and toss everything in a big bowl.

After that, glob and squirt in the dressing and mayo and stir stir stir until everything is well mixed and coated!

I know you can’t SEE how wonderful this truly is in real life, but WOW, I promise, it wont disappoint! ::I’d totally be drooling on myself if I opened my mouth right now::

I chowed down on this for dinner that night, lunch the next day, and then dinner again that night. I know, over kill, right?! But no!!! This stuff is SO GOOD! I couldn’t get tired of it. The crunch, the sweetness, and the fact that I getting my broccoli fill was all I needed to hunker down and zone in to my food for a moment of extreme joy and appreciation! LOL, seriously! New Orleans Red Dress Run

Every year New Orleans holds a charity fund raiser called the Red Dress Run where thousands of men and women get together and dress up in red dresses (yes, the men TOO!) and walk/jog through the streets of the French Quarter from bar to bar drinking beer and having a great time. All of the proceeds are divided between several charities so everything is for a good cause. I think I heard someone mention that last year they raised 94k! Go them! You spend between $40-$60 to get in which includes 2 meal tickets to the food bar, endless beer, and a back pack for the first several hundred people to sign up. As if beer, food, and live music weren’t enough, you also get a map to the many participating bars that also give you access to endless beer included in the ticket charge. WONDERFUL, eh?! Yea, I thought so. This will be the second year in a row that I’ve gone and it seems to be catching on as an annual birthday tradition for me as it always falls on the Saturday after my birthday each year. How perfect!? My birthday seems to stretch out each year, turning into more of a birth-month celebration! Yea, I’m not complaining. Winking smile

I went with Daniel and before we made it to the even we stopped and grubbed down on the only thing we could find at the gas station close to some sort of meal… Nachos!! Lol! Blah, not the best way to start the morning, but it was better than nothing! When we arrived in the Square where every thing was going on we checked in, got pinned on out numbers, and went straight for the beer! We know how to party! Winking smile  We learned from last years experience to keep stacking the cups to keep track of how many beers in we had already had, as last year… um, yea, we had no clue!!

We ran into a few interesting characters while at the park. But honestly that’s not uncommon in New Orleans on a regular day. People love the culture and to show off and party! Gotta Love the City! Open-mouthed smile

We bumped into a few buddies along the way. We had so much fun! We went from rockin’ out to the band on stage, to doing line dances in the middle of the square with hundreds of other Red Dress Runners, to watching 2 really cute and incredible fit guys booty dance it up on stage like, um, strippers… lol!, to bar hopping with buddies down random French Quarter streets, and then ending back in the square to grub down, all while drinking many many glasses of endless Abita Beer! Whoop Whoop! Great time!

IMG_1383(I know, I know, it doesn’t look all that appetizing, but was amazing after 5 beers and having to make do with what cha got as a veggie girl! I scarfed it down!) I piled on coleslaw and beans on a hamburger bun and had a salad on the side! Hahahaha! It tasted like $50 when you’re drunk and hungry!

 

 

Somewhere along the way, very far into my drunken stupor, I got the idea in my head that I NEEDED to find a hula hoop ASAP and I wasn’t going to stop until I found one. LIKE IT WAS A MUST, and I wasn’t going to stop walking in drunken laps around the park until I HAD one! When we first arrived there were many many kiddy hoops all over the place but they got scooped up pretty quickly. Well, when I‘ve had a few drinks in me I’m always in the groove to hoop it up! That first hilarious photo is if my drunken, frustrated face as after much searching I still hadn’t found one… UNTIL BAM!! Out of nowhere, I catch a glimpse and ITS ON! Lol! I couldn’t stop myself. I couldn’t do all the cool tricks I’ve learned because this was a cheap little tiny hoop, but I was super happy and enjoying myself immensely!

I think we finally hit the road around 4pm. BUT we had been there since like, 10am I want to say. Yea, that’s plenty plenty hours or drinking, walking, dancing, and goofing off. Not to mention we had a plane to catch the very next day at 7:30am! Yea, I know, we tried to keep the drinking to a minimum, as being hung over on a plane to Colorado didn’t sound very fun to either of us. We were good though!

Best birthday ever, and I still had a week trip to Colorado to look forward too!!! 31

 

 

I had a really great time with some really great people! The only thing that could have made it better was having my Remie-Girl there with like she was last time! Next Year!! (Heard that Remie?! You better be there! Winking smile)

One more thing!

Yesterday, I was totally rocking out to Christmas Music while prepping all that food! Whaaaaaat!?! hmm…? Was it becasue of the banana cinnamon shake i was sipping on? Always reminds me of Christmas! Or was it being home with only the pups and wanting family around for company? I dont know, BUT it was fun!! First and only time I’ve had Christmas in August… Usually I can’t wait for the radio to quit playing christmas music as its 2 months straight of the stuff. CrAzY!!!! Either way, you might want to try it! It was surprisingly pleasant! Hugs and Snuggles all around!! Can’t wait for snuggle weather!

Returning Home from Vacation!

Coming home from vacation is exhausting. I had the perfect week long vacation of waking up to perfect weather and fresh air each morning, strapping on my running shoes and jogging, or taking the bike around the down town area of Fort Collins, CO. It was perfect! Going from complete freedom and then hopping off a plane and waking up for work the next day takes a lot out of you. Re-adjusting to the weather, and the schedule, and the florescent lights rather than fresh air an sunshine… ::sigh::

After making it home Sunday afternoon I was so full of energy I cleaned my entire house! I was emptying boxes that had been sitting around since the move in (::cough::a year ago!::cough::). I was so refreshed and full of energy! I made plans to head straight to Whole Foods the next day after work to get a bunch of fresh produce and prep a few meals so I could have something healthy to bring to work for lunch all week. I was pumped!

Well, after 4 hours of answering constant ringing phones, having my eye balls glued to a computer monitor, and tediously punching in insurance information, (with no open windows and a fluorescent light shining on me all day, might I add!)… I WAS READY TO CALL IT A DAY! And I had 4 and 1/2 more hours to go! I looked like poop, my eyes were burning, my ears were ringing, and I had a headache the size of Montana! Gah!! By the time I got off of work you probably could have poured me out of that chair, I was so limp and drained. (Can you tell, I’m being a total bummer in this post… Oooo, yea, I need to re-adjust my thinking!)

I almost talked myself out of my Whole Foods run, but I convinced myself if I didn’t make it, it was going to screw up my entire week of eating healthy as I had no other time to go (with kick ball practice and games and having a guest over Wed night). So, I downloaded Pandora Radio on my iPhone, pumped up the Beyoncé Station, rolled down my windows and headed across the Causeway! And I’m so glad I did! Singing, cruising over the lake, and shopping for colorful nurturing foods was just what I needed for a revival!

IMG_2328Here’s what was on my list! I needed beans! And lots of them!  Need My Protein, People!! And fiber!! lol! Winking smile Also some peppers, both red and green, onions, corn, cilantro, and dressing for a huge batch of my Mexican Bean Salad! Then I got some apples, bananas, raisins, and celery (I was thinking for healthy shakes and “Ants on a Log” snacks for breakfast and the office).

I also needed some bulk dry goods! The bulk section is my FAVORITE in Whole Foods!!!
Its like the adult candy store! Saves you money and there are so many yummy choices!IMG_2331 I had brown rice on my list as I had finally run out. I also needed the raisins for my celery, sun-butter, raisins snack. I’ve been wanting to try quinoa as I  keep reading over and over again how healthy it is and how it’s a complete protein, so I finally remembered to nab some of that. But while I was in the bulk section I had to grab some bulk raw organic nuts! Almonds and walnuts are my favorite! 

When I arrived home I got straight to work making a huge batch of this stuff so I have a healthy go-to food for the week:

And after that I gave a new recipe a go! It was inspired by something I saw in the grocery store the other day that looked so tasty but wasn’t vegan friendly. I took note of what was in it and made my own version. It was quite good!! I call it Broccoli Crunch! *Recipe to come!*

*Today I’m grateful for preparation and planning ahead (my meals and exercise, that is… but with everything else…I’m all for spontaneity!), as it seems to make my life a little bit easier when I have some much to squeeze in.

Showing You How Easy Dinner Can Be

I stopped at my local Fresh Market and picked up an organic cucumber, some bruschetta and hummus from the deli section, and a few stuffed grape leaves from the olive bar. Less than $10 and I have left overs for tomorrow’s lunch! Yum!

My pups are huge fans of cucumbers, by the way. That’s Molly under my chair and Buttons standing on her hind legs trying to reach me up on my chair. Adorable! I love my girls!
